Lemon Couscous
1 tblesp olive oil
1 small green bell pepper, chopped
½ med onion chopped
2 cloves garlic grated
1 cup water
1 chicken stock cube
1 cup couscous
Zest of 1 lemon
1 to 2 tablespoon lemon juice (according to taste - I like 2)
Heat oil in saucepan. Add pepper, onion and garlic. Cook until just tender, about 5 minutes.
Add water and stock cube. Bring to a boil over high heat. Add remaining ingredients,
stir and remove from heat. Cover and let stand 5 to 6 minutes or until liquid is absorbed.
Serves 4
