Lentil Curry for Slimmers
Serves 4
20 ml oil
2 cloves crushed garlic
50 gr chopped onion
50 gr chopped green pepper
1 tin chopped tomatoes
200 gr diced carrots
800 gr cooked brown lentils (this is about 30 gr uncooked)
1 chicken stock cube dissolved in 200 ml boiling water
Curry powder to taste
Ginger to taste
(I also add 5 or 6 whole cardamoms and some whole coriander to this dish.)
Heat the oil and sauté the onions, garlic and green pepper. Add the curry powder and sauté for 1 to 2 mins
stirring continuously. Add vegetables, ginger, lentils and stock and bring to the boil.
Season to taste and simmer for 20 minutes.
This dish is very quick and easy to cook.
