When I lived in South
Africa this was a dish that I never enjoyed! It is a favourite dish of Africans and is very popular at barbeques. Since living in England I
found this microwave recipe and now when I manage to get Boerewors (traditional
S.A. sausage) from the South African shop I also buy mealie meal for the
following recipe and serve it with a tomato and onion mixture served over the
top. Now living in the U.K. I thoroughly enjoy this dish!!! Polenta
is similar to mealie meal but so far as I know it is made from yellow maize
instead of white. I personally have not tried making this with Polenta but
it may be worth trying if mealie meal is unavailable. Also known as sadza
this dish is the chief source of carbohydrate and the most popular meal for
indigenous people. Diane
350 ml water
5 ml salt
100 gr mealie meal
1 tablesp butter
Put water and salt into a deep microwaveable bowl. Microwave at 750 until
boiling. Stir in the mealie meal and cover with vented cling wrap and
microwave for a further 2 minutes. Stir well and cover again then
microwave for 10 minutes on medium. Mixture should be like a thick
porridge and fairly dry. Stir in butter, cover and allow to stand
for 5 to 10 minutes.
