| 1 x 450 gr | tin drained pink or red salmon |
| 1 tblsp | lemon juice |
| 150 ml | milk |
| 75 gr | fresh white bread crumbs |
| 1 | egg (beaten lightly) |
| 1 tblesp | freshly chopped parsley |
| salt & pepper to taste | |
| 25 gr | butter |
Put salmon and liquid into a bowl. Mash well and add all other ingredients except butter. Put the butter into a microwave loaf dish and melt for 30 seconds. Grease dish with melted butter. Put salmon mixture into dish and cook in microwave at 700 for approximately 8 mins (All microwaves vary). Leave to stand for 5 mins.
Serve hot or cold with vegetables or salads.
Note: This was a favourite dish that my mother used to cook
regularly, it is easy to make and tastes really good hot or cold.
